Chocolate is a type of confectionery and it most commonly comes in milk, white and dark varieties. Chocolate is made from the seed of Theobroma cacao tree. There are a number of ingredients in chocolate. The most notable of these are caffeine and theobromine. These two chemicals are found in all cocoa beans. In the beans, the amount of each chemical varies depending on the genetics of the tree and the stresses placed on the tree during the growing season.
Milk chocolate contains cocoa solids with either condensed milk or dry milk solids. Milk chocolate is much sweeter than dark chocolate but not as sweet as white chocolate. It’s usually made with dry milk solids, which look like powdered milk. Milk chocolate has at least 10 percent cocoa liquor by weight, and at least 12 percent milk solids..
White chocolate tastes much sweeter than the other two types, because it has more of the sweeter ingredients in it. White chocolate does not have any cocoa in it. It is mostly made of cocoa butter. In addition to the cocoa butter, sugar, milk solids, lecithin and vanilla, white chocolate may contain other flavourings. It has at least 20 percent cocoa butter, 14 percent milk solids, and no more than 55 percent sugar.
Dark Chocolate is chocolate without the milk solids added. Dark Chocolate has a stronger taste than milk chocolate. Dark chocolate is the least sweet and has the strongest chocolate flavour. Dark chocolate often have a higher percent cacao, which means they have a higher proportion of cocoa beans in it than other chocolate do. Dark chocolate has up to 60-85% cocoa.
