Chocolate Cake - Dairy Free, Gluten Free & Vegan!

  • 350g Plant Based spread
  • 300ml Plant Based Milk Alternative
  • 1tbsp Cider Vinegar
  • 300g Gluten Free Self Raising Flour
  • 200g Golden Caster Sugar
  • 9tbsp Cocoa Powder
  • 1tsp Bicarbonate of Soda
  • 1/2 tsp Vanilla Extract
  • 200g Moo Free Milk Baking Drops
  • 400g Icing Sugar
  • 1tbsp Plant Based Milk Alternative
  • 1 Bag Moo Free Choccy Rocks Bunnycomb
  • 1 Bag Moo Free Choccy Rock Moofreesas
  • Pinch of salt

Instructions

  1. Pre-heat the oven to 190C and grease two pans.
  2. Put the 300ml PB milk into a jug and add 1tbsp cider vinegar.
  3. Then in a large bowl add 150g PB spread, 300g GF self raising flour, 200g golden caster sugar, 4tbsp cocoa powder, 1tsp bicarb of soda, 1/2tsp of vanilla extract and 100g baking drops. Mix together.
  4. Then pour over the milk mixture and beat until smooth.
  5. Divide the mixture between the two tins.
  6. Bake for 25-30 minutes or until a skewer comes out clean.
  7. Leave to cool and start making the buttercream.
  8. To make the butter cream melt 100g of baking drops then leave to cool for a couple of minutes.
  9. While that is cooling beat together 200g PB spread and 400g icing sugar with a wooden spoon. Then sift in 5tbsp cocoa powder with a pinch of salt.
  10. Then pour in the melted chocolate and 1tbsp PB milk. Keep mixing until smooth.
  11. Use half of the butter cream in between the two sponges then use the rest on top and around the sides.
  12. Use the choccy rocks to decorate the top of the cake and ENJOY!
