Ā Vegan Aubergine Parmigiana

Pasta is such an amazing comfort food, especially ravioli. For gluten-free people, this is such a treat. Gluten-free ready meals used to be unheard of, particularly with pasta. We canā€™t wait to get our chops around these gluten-free ravioli parcels, stuffed with roasted aubergine, zingy sundried tomatoes and a dairy alternative filling. Best of all, this only takes 3 minutes to cook so is great for both lunch and dinner.

  1. Vegan Magnum sea salt and caramel ice creamsĀ

Tesco

Ā£3.69 for 3

Gluten-free, vegan, nut-free

Vegan Magnum

Ice cream is almost always made of, well, cream and itā€™s sometimes hard to be 100% sure whether it contains gluten or not. The wonderful people at Magnum came to our rescue a few years ago with the totally amazing vegan and gluten-free version of their original ice cream. However, they really upped their game this year with a new sea salt and caramel ice cream. You know when you get invited to dinner and the host says ā€˜bring dessertā€™? We take a couple of boxes of these. Yummy.
